After college I spent a year in AmeriCorps and a year as an AmeriCorps team leader with environmental non-profits. I enjoyed AmeriCorps so much because community service and giving back is very important to me. I love working to improve our world and I wanted to take my service to a new, international level.

Potluck Series: Vegetarian 7-layer Dip

1 can prepared spicy vegetarian refried beans Guacamole, recipe follows 1 jar of medium salsa (I like Pace) 2 cups light sour cream 2 cups shredded sharp cheddar cheese 1 jar sliced California Ripe olives ½ cup cilantro ¼ cup chopped green onions (both the white and green parts) Heat beans in the microwave or on the stove top until smooth and hot.
