Creamy Spring Vegetable Soup

Because yogurt, even thick greek style yogurt, has a tendency to curdle under high heat, keep this technique in mind when using yogurt to add creamy texture to this and any other soup recipe. When you're done blending the primary ingredients, simply remove the soup from the heat, allow it to cool slightly, then stir in the yogurt.
